Ingredients for 4 servings:

  • 1 cod, approx. 1.5 kg
  • 1 lemon(s)
  • salt and pepper
  • 100 g bacon, streaky
  • 12 tomatoes
  • 125 ml white wine
  • 125 ml meat broth
  • 1 bunch of chives

Working time approx. 25 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes

Wash the cod, trim the fins, and season inside and out with lemon juice, salt, and pepper. Cut the bacon into thin strips and lard the back of the fish in two rows. Place the cod in an ovenproof dish (not too small!). Wash the tomatoes, make a cross-shaped cut in the top, and place them whole around the fish. Pour in the wine and stock. Cook in a preheated oven for about 40-50 minutes at medium heat (approx. 200-225°C). Then season the tomatoes with salt and pepper, sprinkle everything with fine chives, and serve. Mashed potatoes are usually served with this dish.
