Lasagna with mozzarella and green spelt

Ingredients for 4 servings:

  • 250 g green spelt, crushed
  • 500 g vegetable stock, boiling
  • 2 bay leaves
  • Celery salt
  • 1 egg(s)
  • 1 tsp mustard
  • pepper
  • 2 cloves garlic
  • 1 tbsp soy sauce
  • Parsley
  • Lasagna sheet(s), homemade
  • 200g mozzarella
  • tomato sauce
  • 150 g mountain cheese, grated
  • Paprika powder
  • butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pour the bay leaf and hot vegetable broth over the green spelt. Let it swell for about 30 minutes. Then mix with the egg, parsley, and seasonings and arrange in layers in a baking dish. First, add a layer of lasagna sheets, then the green spelt mixture, mozzarella, and tomato sauce. Repeat until all the ingredients are used up. Sprinkle the remaining lasagna layer with cheese and, if desired, place a few knobs of butter on top. Bake at 200°C for about 30-40 minutes. Serve with a fruity tomato sauce.
