Ingredients for 1 servings:
- 1 liter of water
- 1 lemon(s)
- 20 sprigs of lavender or elderberry umbels
- 1 kg sugar

Shake off approximately 20 flower heads thoroughly. Pour 1 liter of water into a bowl. Wash the lemon in hot water and slice it. Place half of the slices in the water. Place the flowers on top, followed by the remaining lemon slices. Cover the bowl with a kitchen towel and let the syrup steep for 2 days. After the steeping time, strain the contents through a kitchen towel into a saucepan. Add the sugar and, if desired, food coloring, and bring to a boil for a few minutes. Pour the still-hot syrup into cleaned bottles and seal them airtight. The syrup will keep unopened for several months.
