"Layered fish" made from matjes or herring fillet

Ingredients for 8 servings:

  • 750 g herring fillet(s) or herring fillet
  • 2 large onions
  • 3 large tomatoes
  • 1 jar of pickles (medium jar)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

You’ll need a container with a capacity of approximately 2 liters and a lid. Halve the onions and thinly slice them, as well as the tomatoes and cucumbers. Cut the fish into bite-sized pieces. Layer everything alternately in a container: first layer of onion rings, then fish, then cucumbers, and then tomatoes, seasoning with salt and pepper. Repeat until all is used up, then finish with onions. Seal the container and let the layered fish rest in the refrigerator for at least 12 hours. Serve with boiled potatoes or baguette. The layered fish also works well on a cold buffet.
