Layered salad of salted herring

Ingredients for 4 servings:

  • 8 large salted herring (salted herring fillets)
  • 4 m.-sized onion(s)
  • 4 large gherkins
  • Pepper, freshly ground
  • Mustard
  • Oil, neutral
  • 2 m.-large bay leaves
  • 8 juniper berries

Working time approx. 30 minutes; Rest time approx. 2 days 2 hours; Total time approx. 2 days 2 hours 30 minutes

Soak the salted herring fillets in plenty of water for about 2 hours, depending on your taste. Peel the onions, halve them, and slice them thinly. Halve the gherkins and slice them into approximately 5 mm thick slices. Dry the soaked salted herring and cut them into approximately 1 cm pieces. Place all ingredients in a large bowl in several layers as follows: onions, gherkins, herring, pepper, mustard, and oil. Distribute the juniper berries and bay leaves between the layers. The top layer should be a smooth layer of mustard, coated with a little oil. Cover the bowl and let the salad sit in the refrigerator for at least 2 days. Stir the salad well just before serving and serve with fresh boiled potatoes. Bread and rolls also go well with it. This makes a good hangover breakfast on New Year’s morning, for example.
