Ingredients for 3 servings:

  • 1 pack of herring fillet(s)
  • ½ liter buttermilk
  • 1 cup sour cream
  • gherkins
  • 1 apple
  • 1 onion(s)
  • cocktail tomatoes
  • Allspice
  • peppercorns
  • 2 small bay leaves
  • Vinegar

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 30 minutes

with buttermilk

Halve or cut the herring fillet into smaller pieces, as desired. Place it in a larger bowl with the buttermilk and sour cream. The sour cream can be mixed with a little milk beforehand until smooth. Wash and quarter the apple, remove the core, and cut into small pieces or cubes. Cut the pickled cucumbers into small slices. Wash and halve the cherry tomatoes. Add all ingredients to the bowl with the fish. Peel the onion and slice into rings. Add a teaspoon of vinegar to a pot with about a quarter liter of water. Add the onion to the vinegar, bring to a boil, and simmer for about 3 minutes. This will take the heat off the onions. Remove the onion rings from the water with a fork and add to the fish. Add the bay leaves, allspice, and peppercorns or ground pepper, stir briefly, and let stand in the refrigerator for 2 hours. Potatoes go best with this dish.
