Ingredients for 2 servings:
- 500 g chicken breast fillet(s)
- 150 g leaf spinach
- 150 g mushrooms
- 1 onion(s)
- 1 can coconut milk, light, 400 ml
- 1 tbsp tomato paste
- 1 tsp curry paste
- Oil for frying
- salt and pepper
- curry powder
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Cut the chicken breast fillets into bite-sized pieces, wash and quarter the mushrooms, and finely chop the onion. Brown the chicken breast pieces in a little oil, then add the onions and mushrooms. Briefly fry the tomato paste and curry paste, then deglaze with the coconut milk. Then add the spinach leaves, stir, and simmer for 10 minutes. Season with salt, pepper, and curry powder. Serve with rice.
