Ingredients for 4 servings:

  • 200 g flour
  • ½ tsp baking powder
  • 1 tsp caraway, ground
  • 150 g quark (low-fat quark)
  • 4 tbsp milk
  • 3 tbsp oil
  • 700 g leek
  • 1 bunch of parsley
  • 150 g sour cream
  • 2 eggs
  • 100 g feta cheese
  • Salt
  • pepper
  • Paprika powder, sweet
  • nutmeg
  • some oil for greasing and frying

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Leek quiche with feta

The recipe is for a 26 cm springform pan. Preheat oven to 180°C. Mix flour, baking powder, caraway seeds, and a pinch of salt. Knead with quark, milk, and oil to form a smooth dough; chill for about an hour. Then line the greased pan with the dough (bottom + approx. 2 cm high edge). Cut the leek into fine rings and sauté in a little hot oil until almost cooked. Let cool, then add salt. Whisk the sour cream with the eggs, season with pepper, paprika, and nutmeg. Wash and finely chop the parsley, and cut the feta into small cubes. Mix both with the leek. Add the cream and egg mixture and mix well. Spread over the dough and bake for about 30 minutes. It also tastes good cold or can be frozen for later.
