Leek Carbonara

Ingredients for 4 servings:

  • 100 g bacon (breakfast bacon) in thin slices
  • 1 stalk(s) leek
  • 2 cloves garlic
  • 1 tbsp butter
  • 2 egg yolks
  • 100 g cream
  • 50 g Parmesan, grated
  • 400 g pasta (spaghetti)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook pasta according to instructions. Meanwhile, finely dice bacon. Slice leek into thin rings. Finely chop garlic. Heat butter in a saucepan and fry bacon. Then add leek and garlic and sauté for 2 minutes. Whisk egg yolks and cream. Toss hot pasta in the bacon mixture and fold in the egg cream. Immediately remove pan from heat. Season pasta with pepper and serve sprinkled with Parmesan cheese.
