Leek chicken with cashew nuts and rice

Ingredients for 2 servings:

  • 300 g chicken breast fillet(s)
  • 4 tbsp soy sauce
  • 2 garlic cloves
  • 1 leek(s)
  • 50 g cashew nuts
  • some flour
  • 2 tbsp olive oil
  • 150 g rice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Cut the chicken breast fillet into pieces or strips. Finely chop the garlic cloves. Marinate both with the soy sauce and refrigerate. Cook the rice according to the package instructions. Trim the leek and cut it into small rings. Finely chop the cashews. Rub a wok or frying pan with 1 tablespoon of olive oil. Add the other tablespoon and heat to medium heat. Fry the marinated chicken breast fillet, dusted with a little flour, in it. Then remove the meat and briefly heat the leek in the wok. Add the cashews and heat briefly. Then add the meat back in and mix in the rice, and heat briefly again if necessary. Thanks to the soy sauce and leek, no additional seasoning is necessary; however, you can season to taste with salt and pepper. Enjoy!
