Leek quiche with ham

Ingredients for 1 servings:

  • 200 g flour
  • 100 g butter, cold
  • 1 egg(s)
  • 2 tbsp water
  • ½ tsp salt
  • 2 stalk(s) leeks
  • 200 g cooked ham
  • 1 onion(s)
  • 4 eggs
  • 200 g cream
  • 100 g cheese, grated
  • salt and pepper
  • nutmeg
  • Paprika powder

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 35 minutes

Quickly knead a shortcrust pastry from flour, cold butter, egg, salt, and possibly a little water. Wrap in foil and refrigerate for about 30 minutes. Meanwhile, finely chop the leek, ham, and onion and fry briefly in a pan. Let cool. Season with salt and pepper. Roll out the cold dough and press into a prepared tart pan. Prick the base with a fork. Spread the leek and ham mixture on top. Mix the cream and eggs, season, and pour over the dough. Sprinkle with cheese. Bake in a preheated oven at 200°C (400°F) for about 30-40 minutes.
