Leek salad with smoked salmon

Ingredients for 4 servings:

  • 1 stalk(s) leek
  • 200 g smoked salmon
  • 1 lemon(s), untreated
  • olive oil
  • salt and pepper
  • 2 eggs, hard boiled or
  • 4 artichoke hearts from the jar

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

quick starter

Slice only the white part of the leek into thin rings. Finely slice the salmon and add it to the leek. Add the juice and zest of 1 lemon and a little olive oil. Season gently with salt, as the salmon is already salty, and grind pepper over it. Let the salad marinate in the refrigerator for about 1 hour. Garnish with half artichoke hearts and/or eggs.
