Leek soup

Ingredients for 2 servings:

  • 2 stalk(s) leeks (one thick or 2 thin ones)
  • 50 g ham, raw
  • 300 ml meat broth
  • ½ tsp curry
  • Salt
  • pepper
  • Crème fraîche to serve

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Clean the leek, halve it lengthwise, and cut it into thin strips. Dice the ham and sauté it in a little oil or clarified butter in a hot pan until it develops a roasted aroma. Add the leek, stir through, and sauté briefly. Pour in the stock (about 300-400ml, depending on how thick you want the soup) and bring to a boil briefly, then reduce the heat slightly. Let the soup simmer gently until the leek is tender (about 7-10 minutes). For a more concentrated soup, you can briefly puree it. Season to taste. Serve with a dollop of crème fraîche on each plate, if desired.
