Leek vegetables with honey

Ingredients for 6 servings:

  • 1 kg leek(s)
  • 150 g butter, mildly soured
  • 4 tbsp honey (bee honey), spicy
  • 250 ml vegetable broth or vegetable stock, without salt
  • 2 tbsp curry powder
  • 1 bunch parsley, freshly chopped
  • 1 tbsp, heaped celery leaves, freshly chopped
  • n. B. Salt and pepper, white, finely ground

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Remove any sand from the leek stalks, wash them, and slice them. Rinse the parsley and celery leaves under running water, pat them dry, and chop them. Melt the butter and honey in a roasting pan and caramelize over low heat until lightly golden brown. Then deglaze with vegetable stock and bring to a boil with the leek slices and curry powder. Season with salt and pepper and simmer gently. After about 15-20 minutes, add the chopped leaves and cook for another 2 minutes. This delicious vegetable is now ready to serve as a main course or as a side dish to any meat dish.
