Lemon apple cake with quark

Ingredients for 2 servings:

  • 175 g flour
  • 2 tsp baking powder
  • 100 g maple syrup
  • 1 pinch of salt
  • 3 eggs
  • 1 packet of vanilla sugar
  • 100 g oil
  • 125 g quark
  • 1 apple
  • 1 lemon(s), zest
  • Fat and breadcrumbs for the form

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Beat the eggs, maple syrup, and salt until creamy. Slowly add the oil and stir in. Stir in the quark. Combine the flour, baking powder, lemon zest, and vanilla sugar and stir in. Stir in a very finely diced or grated apple. Pour the batter into a greased, breadcrumb-coated 26 cm loaf pan and bake in a preheated oven at 175°C (top/bottom heat) for about 45-50 minutes. If the top gets too brown, cover it. Don’t be surprised, the cake will collapse as it cools.
