Ingredients for 1 servings:

  • 3 liters of water
  • 2 kg sugar
  • 60 g citric acid
  • 3 lemons
  • 3 handfuls of lemon balm, plucked leaves

Instructions

Working time approx. 15 minutes; Rest period approx. 2 days; Total time approx. 2 days 15 minutes

Bring the water to a boil with sugar and citric acid. Simmer gently, stirring constantly, until the sugar dissolves. Then remove from the heat. Slice the lemons and add them to the still-hot liquid along with the lemon balm leaves. Let it steep for two days, then strain and bottle. Diluted with water, it makes a refreshing drink for hot days.
