Ingredients for 4 servings:

  • 400 ml water
  • 150 g sugar
  • 2 handfuls of lemon balm
  • 1 lemon(s)

refreshing delicious sorbet, also suitable as a starter

Bring the water and sugar to a boil, then let the syrup cool. Add the lemon balm leaves to the cold syrup. There should be enough leaves so that they are just covered by the syrup. Cover everything and let it sit in the refrigerator for a day. The next day, strain the liquid and add the juice of one lemon. Pour the well-chilled liquid into a running ice cream maker and freeze. If you like, you can also top the sorbet with sparkling wine, Prosecco, etc.
