Ingredients for 1 servings:

  • 150 g margarine, soft, (cream)
  • 75 g powdered sugar
  • 1 egg yolk
  • 1 packet of vanilla sugar
  • 250 g flour
  • 1 bottle of butter-vanilla flavoring
  • 1 bottle of flavoring (lemon flavor)
  • 1 pinch of salt
  • 100 g jam (lemon)
  • Food coloring, yellow
  • ½ pack of baking powder
  • Water
  • lemon juice
  • Powdered sugar, as needed

Cream the margarine and powdered sugar until creamy. Butter can also be used, but in this case the vanilla butter flavoring is omitted. Then quickly knead the egg yolks, vanilla sugar, salt, yellow food coloring (or saffron), lemon flavoring (or lemon zest/peel), and 1/2 a teaspoon of baking powder (can also be omitted) with the flour. Roll out the dough to a thickness of about 3 mm. Cut out round cookies (diameter about 3 cm). Cut out small moons from half of the cut-out dough. If you don’t have a small cookie cutter, you can also cut out round shapes using a thimble or a small glass (shot glass). Bake in a preheated oven (200°C) for about 12 minutes. Heat the lemon jam and strain it through a sieve. Spread it over the round cookies and place the cut-out lids on the cookies. Now sprinkle the cookies with powdered sugar. Or mix a glaze made from lemon juice, water (for thinning), yellow food coloring, and powdered sugar, and brush it onto the cookies. The lemon juice in the glaze further enhances the lemon flavor. You can adjust the acidity by diluting it more or less.
