Lemon cookies with creamy filling

Ingredients for 1 servings:

  • 150 g butter, soft
  • 140 g powdered sugar
  • 1 egg(s)
  • 1 egg yolk
  • 1 vanilla pod(s)
  • ½ lemon(s), untreated, grated zest
  • 280 g flour
  • ½ tsp baking powder
  • 125 ml milk
  • 230 g butter, soft
  • 200 g powdered sugar
  • 600 g white chocolate
  • ½ lemon(s), juice

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Dough: Beat the butter and powdered sugar until fluffy. Scrape out the vanilla pod and stir it into the butter and sugar mixture along with the egg, egg yolk, and lemon zest. Alternately add the flour and milk until well blended. Place the dough in a piping bag and pipe small circles, approximately 5 cm in diameter, onto a baking sheet lined with baking paper. Bake for approximately 10-12 minutes at 150°C. Let the cookies cool. For the filling, mix the butter and powdered sugar, stir in the melted white chocolate and lemon juice, and beat until fluffy. Place a tablespoon of the filling on the flat side of a cookie and cover with a second cookie.
