Lemon-horseradish dressing

Ingredients for 2 servings:

  • 1 medium-sized lemon(s)
  • 2 tbsp cream cheese with horseradish
  • 1 tsp sugar, alternatively liquid sweetener
  • Salt, preferably fleur de sel
  • Pepper OR:
  • Lemon pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Squeeze the lemon. Juice it into a bowl, add the cream cheese and horseradish (creamed horseradish also works). Use 2 or 3 tablespoons of cream cheese, depending on the desired consistency. Mix with a whisk. Season with salt and pepper. Sweeten gently. The dressing should taste fruity but not too sweet. It goes well with any leafy salad (except iceberg lettuce). We like it best with lamb’s lettuce. Serve with pan-fried, grilled, or schnitzel. Or simply on its own for a snack. For the WWs: 1 serving has 2 portions (if you use 1 teaspoon of sugar and then sweetener, and 2 tablespoons of double cream cream cheese).
