Ingredients for 4 servings:

  • 1 small lemon(s), untreated
  • 1 spring onion(s)
  • 2 handfuls of arugula
  • 2 small avocados
  • 2 tbsp milk 1.5%
  • 300 g quark, low-fat
  • 1 tbsp mustard, hot
  • Sea salt
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Spread for breakfast

Wash the lemon in hot water and dry. Finely grate the zest and squeeze out the juice. Clean, wash, and finely slice the spring onion. Wash the arugula, shake dry, and finely chop. Halve the avocados, peel them, and remove the stones. Chop the flesh into small pieces and blend it with the lemon juice and zest, milk, quark, and mustard. Stir in the spring onion slices and arugula and season with sea salt and pepper.
