Lemon Petit Fours

Ingredients for 1 servings:

  • 3 large eggs
  • 125 g sugar
  • some vanilla pulp
  • 1 lemon(s), the peel
  • 150 g flour
  • 1 pinch of salt
  • 1 tsp baking powder
  • 60 ml vegetable oil
  • 100 ml soda water
  • ½ jar jam, sour, e.g. currant
  • 200 g powdered sugar
  • 1 lemon(s), the juice
  • n. B. food coloring
  • n. B. cake decoration

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Preheat the oven to 180°C (top/bottom heat). Line a baking tray with baking paper. Beat the eggs for about 1 minute, then add the sugar, vanilla, and lemon zest and mix everything for about 10 minutes until light and creamy. Mix the flour with salt and baking powder and sift it over the mixture. Add the oil and water and fold everything in. Place the dough on the baking tray and smooth it out. Bake for 10-15 minutes. Do the skewer test. Turn out onto a piece of baking paper dusted with sugar and let cool. Then cut the dough into two equal pieces. Heat the jam in a small saucepan and spread it on the first layer. Place the second layer on top. Wrap the cake in cling film and refrigerate for 1 hour. Cut the cake into small cubes. Make a glaze from powdered sugar and lemon juice. If desired, you can color the glaze with a little food coloring. Pour the glaze over the petit fours. If desired, further decorate with sugar flowers or marzipan.
