Lemon salmon fillet

Ingredients for 2 servings:

  • 2 salmon fillets, fresh or frozen
  • 4 carrots
  • 1 bell pepper(s)
  • 2 onions
  • 2 lemons
  • 200 g Parmesan
  • 2 tsp, heaped herbs of Provence
  • 1 tsp salt
  • 2 dashes olive oil for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Preheat the oven to 180°C fan-assisted oven or 200°C conventional oven. Peel the carrots and cut into strips. Clean and slice the peppers. Peel the onions and cut into eighths. Rinse the salmon fillets with cold water, dry them, and remove any bones. Grate the Parmesan cheese. Slice the lemons. Drizzle an ovenproof casserole dish with olive oil, add the vegetables, place the salmon fillets on top, and season with herbs and salt. Sprinkle generously with Parmesan cheese and then top with the lemon slices. Bake the fish in the oven for 20-30 minutes. The cooking time depends on the size and thickness of the fillets and whether the fish is frozen or fresh.
