Ingredients for 1 servings:
- 2 organic lemons
- 250 g sugar
- 60 g butter
- 3 eggs
Instructions

Not just on bread!
Wash the lemons, zest, and squeeze the juice. In a bowl, cream the butter and sugar until light and fluffy, then beat in the eggs. Place the bowl in a bain-marie and add the lemon juice. Stir until the mixture thickens; this can take up to 30 minutes. Do not boil. Pour the finished mixture into jars and store in the refrigerator. Not only delicious on bread, but, as in the UK, it’s also delicious with shortbread or cakes.
