Ingredients for 1 servings:
- 300 g strawberries
- 150 g butter
- 300 g sugar
- 3 eggs
- ½ lemon(s), the juice
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Puree the strawberries and strain them. (The seeds will interfere with the creamy curd.) Heat the fruit mixture with butter and lemon juice. Add the sugar and stir to melt. Beat the eggs. Stir in a little of the hot mixture and return everything to the pot. Stir constantly over medium heat until thickened (do not allow to boil!). Immediately pour into clean, hot-rinsed jars. Store in the refrigerator. Keeps for about 4 weeks.
