  • 5 organic lemons
  • 120 ml water
  • 170 g sugar
  • 1 pinch of salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

Wash the lemons in hot water. Finely grate the zest and squeeze the lemons. Combine the lemon juice and 1-2 tablespoons of lemon zest in a saucepan with the sugar, salt, and tap water. Heat gently and simmer for about 5 minutes, or until the sugar has completely dissolved. Remove the prepared lemon syrup from the heat and let it cool slightly. Strain it through a sieve into a tightly sealed bottle, let it cool completely, and store it in the refrigerator. Top up the syrup with cold mineral water as needed, roughly in a ratio of 1:10, and serve in glasses with a sliced lemon and ice cubes. The prepared amount of syrup is enough for about 2 liters of mineral water.
