Lemon syrup for lemonade

Ingredients for 1 servings:

  • 125 ml water
  • 125 g brown sugar
  • 5 lemons (organic)
  • 1 pinch of salt

Boil the water with the brown sugar. Add the zest of one organic lemon. Be sure to use only the yellow part of the peel, as the white pith underneath can make the lemonade bitter. A pinch of salt rounds out the flavor. Once the sugar has dissolved, add the juice of five lemons (one lemon yields about 70 ml of juice). Simmer the mixture for about 10 minutes, then immediately pour into a clean glass bottle, seal tightly, and refrigerate. The syrup will thicken as it cools. Mix the syrup with mineral water at a ratio of 1:10.
