Ingredients for 1 servings:
- 250 g flour
- 125 g butter, soft
- 1 pinch of salt
- 1 egg(s)
- 50 ml water or milk
- 6 eggs
- 3 lemon(s), the peel
- 3 tbsp sugar
- 1 can condensed milk

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes
2 variations…sometimes creamy…sometimes airy…but always refreshing
For the dough: Quickly knead the flour, butter, salt, egg, and water or milk. Wrap in cling film and let it rest in a cool place for 1 hour. Roll it out and line a baking dish (leaving the edges intact), prick several times, and bake blind. 175ºC / approx. 15 min. For the filling: Mix the eggs with lemon zest, sugar, and condensed milk and spread over the baked dough. 175ºC / 20 min. It also tastes great if you separate the eggs for the filling and beat the egg whites until stiff. This makes it fluffier!
