Lemon – white cabbage

Ingredients for 4 servings:

  • 1 head of white cabbage, approx. 1 kg
  • 125 ml vegetable stock
  • 125 ml lemon juice
  • 100 g clarified butter
  • 200 g rock sugar, white
  • 2 bay leaves
  • 4 cloves
  • 1 lemon(s), thinly sliced

Remove the outer leaves from the cabbage, quarter them, remove the stalk, and then cut the quarters into wedges. Rinse briefly and pat dry. Heat clarified butter in a casserole dish and brown the cabbage wedges on both sides. Add the spices to the cabbage, pour in the broth and lemon juice, and sprinkle the rock candy over them. Without stirring again, cover the pot tightly and reduce the heat. Braise the cabbage over medium heat for about an hour, stirring again afterward. Arrange on a platter, garnish with lemon slices, and serve as a side dish, e.g., with smoked pork.
