Lentil curry

Ingredients for 2 servings:

  • 250 g lentils, red
  • ½ liter vegetable broth
  • 1 bunch of spring onions
  • 2 medium-sized red bell peppers
  • 1 m.-sized carrot(s)
  • 1 tbsp oil
  • 2 tbsp curry powder
  • ¼ tsp chili pepper(s), dried, crumbled
  • Salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

vegetarian and spicy

Pre-cook the lentils in the vegetable broth for 5 minutes. During this time, clean the spring onions and slice them into thin rings. Finely chop the garlic. Cut the peeled carrots and bell peppers into very small cubes. I used the same size cubes as the lentils. Sauté the vegetables in the oil for 2 minutes. Briefly sauté the curry powder. Add the lentils and their liquid. Season to taste with chili, salt, and freshly ground pepper.
