Lentil Salad with Avocado

The perfect lentil salad with avocado recipe with a picture and simple step-by-step instructions.

  • 250 g Lentils brown
  • 3 Pc. Grated carrots
  • 2 Pc. Celeriac
  • 1 Pc. Zucchini
  • 1 Pc. Red pepper
  • 1 Pc. Lime
  • 1 Can Diced tomatoes
  • 4 tablespoon Extra virgin olive oil
  • 1 Pc. Fresh avocado
  • 2 Pc. Vegetable broth
  1. Cook the lentils with the vegetable stock cubes for about 30 minutes, grate the vegetables into coarse strips, dice the paprika, cut the avocado into fine pieces, halve the lime and drip the juice over the finished portions. Mix the lentils and vegetables together while the lentils are still hot, then place them lukewarm on the plate and decorate the avocado and the tomato pieces to the right and left, season everything with Scharfmacher from Sonnentor and drip the lime on top.
