Lentil soup, grandma's style

Ingredients for 4 servings:

  • 400 g lentils
  • 2 liters of water
  • 500 g spare ribs (skin-on)
  • 4 Mettwurst sausages
  • 1 bunch of soup greens, chopped
  • 750 g potatoes, diced
  • 2 tsp, heaped lovage, dried
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 day 2 hours

Soak the lentils in salted water for 24 hours. Add the ribs and the fork-pierced Mettwurst sausages, bring to a boil, and cook over low heat until almost tender. Then add the potatoes and vegetables, bring back to a boil, and cook over low heat until tender. Remove the meat and, in small pieces, return it to the soup. Season to taste with salt, pepper, and lovage.
