White bean soup or "goose food" in grandma's style

Ingredients for 4 servings:

  • 1 can white beans with juice
  • ½ can carrot(s), drained, finely chopped
  • ¾ liter of water
  • 400 g potatoes, diced
  • 1 bunch of soup greens, chopped
  • 1 large onion(s), cut into large cubes
  • 4 Mettwurst sausages, sliced
  • 2 tbsp parsley, dried
  • salt and pepper
  • Sugar
  • some flour or cornstarch to thicken

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

Boil the Mettwurst slices in water over medium heat for about 45 minutes until soft. Then add the potatoes, vegetables, and onion and cook for about 20 minutes. Now add the can of beans and carrots, bring to a boil, and season with salt, pepper, and sugar. Sprinkle with parsley and thicken with flour or cornstarch.
