Lentil soup with spaetzle

Ingredients for 6 servings:

  • 200 g lentils
  • salt and pepper
  • 1 tsp, heaped thyme
  • 2 liters of vegetable broth
  • 1 m.-sized onion(s)
  • 250 g smoked ham cubes
  • 3 tbsp tomato paste
  • 2 cups spaetzle
  • 3 Mettwurst sausages

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 13 hours 30 minutes

The cup used holds approximately 200 ml. Soak the lentils for 12 hours, or overnight if necessary, then simmer in the vegetable broth with salt, pepper, and thyme for approximately 1 hour. Peel and dice the onion. Sauté the diced onion and ham in a pan. Add the tomato paste and sauté briefly. Add the mixture to the lentils. Chop the Mettwurst sausages and add them along with the spaetzle, then cook for another 15 minutes.
