Ingredients for 1 servings:

  • 350 ml water
  • 175 g prunes, pitted
  • 225 g sugar (molasses or molasses, health food store)
  • 75 ml beer (dark beer)
  • 175 g margarine
  • 175 g sugar (muscovado sugar, health food store)
  • 250 g flour (wholemeal)
  • 200 g flour (spelt)
  • 4 tsp baking powder
  • 4 tsp anise

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

If you like licorice you will love this anise cake

Pour boiling water over the prunes and let them soak for 5 minutes, then puree them with the molasses and dark beer. Beat the margarine and sugar until fluffy. Gradually stir in the plum mixture. Stir in the flour, baking powder, and anise. Pour into a greased 20 cm square baking pan and bake at 180°C for about 50 minutes.
