Light, Mediterranean Ebly salad

Ingredients for 4 servings:

  • ½ cucumber(s)
  • 1 tomato(s)
  • 1 bell pepper(s), red
  • 100 g feta cheese
  • 1 spring onion(s)
  • 1 sachet Ebly, 125 g
  • 1 tbsp lemon juice
  • 4 tbsp olive oil
  • 6 tbsp balsamic vinegar
  • salt and pepper
  • Herbs and spices to taste
  • 1 handful of arugula

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Prepare the Ebly according to the package instructions, rinse with cold water, and let cool in a bowl. Dice the cucumber, tomato, bell pepper, and feta. Slice the spring onion into rings. Mix everything with the Ebly. Then add the lemon juice, olive oil, and balsamic vinegar to the salad and season with salt, pepper, and herbs. Stir in the arugula just before serving.
