Sweet potato soup simple, quick and delicious

Ingredients for 2 servings:

  • 1 sweet potato(s)
  • 1 carrot(s)
  • 1 m.-sized onion(s)
  • 300 ml vegetable stock
  • 50 ml red wine
  • some oil for frying
  • some salt and pepper
  • possibly chili

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel the vegetables and chop them into small pieces so that the carrot and sweet potato pieces are roughly the same size. Place everything in a pot and fry in a little oil, then deglaze with the red wine. If you like it spicy, add a chili pepper or two. Then add the vegetable stock and simmer over medium heat for about 20 minutes. Once the vegetables are cooked, puree everything with a hand blender until you have a creamy soup. Season to taste with salt and pepper. 180 kcal per serving.
