Light potato salad with chives

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 6 gherkins
  • 1 bunch of chives
  • 250 ml light mayonnaise
  • 4 tbsp milk
  • 2 tsp mustard
  • Salt and pepper, freshly ground

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Low in fat and super tasty!!!

Wash the potatoes, boil in their skins for about 20 minutes, peel, and slice. Dice the gherkins. Wash the chives and cut them into small rolls. Place the potatoes, chives, and gherkins in a bowl. Mix the light mayonnaise with milk and mustard and mix well with the salad ingredients. Season the potato salad with salt and pepper to taste. I like to serve this potato salad with a barbecue.
