Light zucchini – tomato – mozzarella – salad

Ingredients for 2 servings:

  • 2 zucchinis
  • 4 tomatoes
  • 1 light mozzarella
  • 4 sprigs of mint
  • olive oil
  • Balsamic vinegar
  • chili
  • Salt and pepper, mixed, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the zucchini lengthwise and then thinly slice. Heat a little olive oil in a pan and fry the zucchini slices until golden brown. Add the mint leaves and season with chili flakes (go ahead and add a generous amount), pepper, and a little salt. Cut the tomatoes and mozzarella into bite-sized pieces and add the cooled zucchini. Toss everything with balsamic vinegar, a little more olive oil if desired, and season with pepper and salt if desired.
