Lightning pizza with salami

Ingredients for 2 servings:

  • 2 rolls (toastie rolls)
  • 4 tsp Ajvar, alternatively pesto
  • 125g mozzarella
  • 1 small zucchini
  • 75 g salami, alternatively cherry tomatoes
  • some salt and pepper
  • possibly basil, cut into strips
  • possibly pine nuts, roasted

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 21 minutes

Grate the zucchini and sprinkle lightly with salt and pepper. Halve the toastie rolls and spread a teaspoon of ajvar on each half. Drain the mozzarella well, slice it, and place it on the halves. Spread the zucchini grated on the mozzarella. Cut the salami into strips and place them on the pizzas. Bake under the preheated oven grill on the second rack from the top for 6 minutes at 180°C. As a variation, you can use pesto instead of ajvar and place cherry tomatoes on the pizzas instead of salami. After baking, you can sprinkle this version with basil strips and toasted pine nuts.
