Lightning poppy seed cake

Ingredients for 1 servings:

  • 150 g flour
  • 150 g poppy seeds
  • 300 g sugar
  • 125 ml oil
  • 125 ml water
  • 4 eggs
  • ½ tbsp baking powder
  • Fat for the mold
  • possibly jam

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Separate the eggs and beat the egg whites until stiff peaks form. Whisk the egg yolks, sugar, and oil until frothy. Then add the water, flour, baking powder, and poppy seeds, and finally fold in the stiff peaks. Pour into a greased loaf pan and bake at 180°C (top and bottom heat) for about 45 minutes. Test the doneness with a skewer after 40 minutes. If you like, you can cut the cooled cake in half and fill it with jam (strawberry, raspberry, etc.). It also tastes delicious using ground almonds instead of poppy seeds.
