Ingredients for 1 servings:
- 125 g butter
- 80 g sugar
- 1 pinch of salt
- 2 egg yolks
- 2 limes, grated
- 150 g flour
- 80 g desiccated coconut
- 100 g powdered sugar
- Lime juice
- some lime zest
- n. B. Pistachios, chopped
Instructions
Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes
Cream the butter until soft. Mix in the sugar, salt, egg yolk, zest, and juice of ONE lime. Continue stirring until the mixture is light in color. Add the flour and coconut flakes, mix to form a dough, cover, and chill for about half an hour. Roll out the dough in portions on a lightly floured surface to a thickness of 4 mm. Loosen the dough with a spatula. Cut out shapes, place on a baking sheet lined with baking paper, and chill for about 15 minutes. Bake for about 8 minutes in the center of an oven preheated to 200 degrees Celsius. Mix the icing sugar and juice of the second lime to form a thick glaze. Brush the cookies with this while they are still warm, sprinkle with lime zest, or decorate with chopped pistachios.
