Ingredients for 4 servings:

  • 8 limes
  • 2 tbsp sea salt
  • 1 tbsp mustard seeds, black
  • 3 garlic cloves, chopped
  • 3 cm ginger, fresh, chopped
  • 2 tbsp cumin powder
  • 2 tsp coriander seeds, crushed
  • 1 tsp chili powder, mild
  • 2 tbsp sweetener
  • 2 tbsp white wine vinegar
  • 250 ml water
  • Baking spray (fat-free cooking spray)

Working time approx. 30 minutes; Rest period approx. 2 days; Cooking/baking time approx. 30 minutes; Total time approx. 2 days 1 hour

Slimming World Recipe – Low-calorie version of the classic Indian sauce.

Cut the limes into 16 pieces and place them in a large bowl. Add the sea salt, mix, and let stand in a cool, dark place for two days, stirring occasionally. Spray a pan with grease-free cooking spray (not suitable for non-stick pans) and heat over medium heat. Add the mustard seeds and sauté for 30 seconds, or until the seeds begin to pop. Add the garlic, ginger, cumin, coriander seeds, and chili powder. Sauté for 30 seconds. Add the limes, sweetener, vinegar, and water, and bring to a boil. Then simmer over low heat for 15 minutes, or until thickened. While still piping hot, pour into sterilized jars and screw on the lids. Store in a cool, dark place. Serve at room temperature. By varying the amount and spiciness of the chili, you can adjust the heat from mildly spicy to fiery hot. This is the low-calorie version of this classic Indian sauce.
