Ingredients for 4 servings:

  • 500 g peach(s), pitted
  • 150 g shallot(s)
  • 1 tbsp olive oil
  • 35 g garlic
  • 4 chili peppers
  • 1 lime(s), juice
  • 150 g cane sugar
  • ¼ tsp ginger powder
  • ¼ tsp turmeric
  • 1 tsp curry powder
  • 200 ml white wine
  • ½ tsp salt

Working time approx. 20 minutes; Total time approx. 20 minutes

nice recipe for ripe peaches, also for preserving

Peel and pit the peaches, and cut into small cubes. Dice the shallots and garlic. Heat the oil in a pan and sauté the onions and garlic. Add the peach cubes and fry briefly. Meanwhile, finely chop the chilies and add them to the pan with the seeds. Stir in the spices and sugar. Deglaze with the wine and lime juice and simmer until reduced to the desired consistency. While still hot, pour into jars, seal, and refrigerate for a short time, or simmer for 30 minutes at 95°C for storage. Goes well with grilled poultry and rice dishes.
