Ingredients for 1 servings:

  • 200 g biscuit(s) (wholemeal butter biscuits)
  • 125 g butter
  • Fat for the mold
  • 7 lime(s), untreated
  • 4 egg whites
  • 4 egg yolks
  • 2 cans of sweetened condensed milk, 400 g each
  • 1 pinch of salt
  • 150 g sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely grind the biscuits in a blender or food processor. Melt the butter and mix both. Press the mixture firmly into the base of a greased 24 cm pie dish, leaving a 2 cm high edge on the sides. Bake the base in a preheated oven at 180°C on the second shelf from the bottom for 10 minutes. Finely grate the zest of 4 limes and squeeze 250 ml of juice from 7-8 limes. Mix together the lime zest and juice, the egg yolk, and the condensed milk. Pour onto the pastry base and bake for another 40 minutes at the same temperature. Then let cool on a wire rack. Beat the egg whites, a pinch of salt, and the sugar until stiff peaks form and spread over the pie. Use a tablespoon to create streaks. Bake at 150°C on the second shelf from the top for 15-20 minutes, until the surface is lightly browned. Let cool and serve.
