Lime quark cake

Ingredients for 1 servings:

  • 100 g flour
  • 25 g cornstarch
  • 3 tsp, leveled baking powder
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 3 eggs, size M
  • 125 g butter, soft
  • 1 ¼ kg quark, (20%)
  • 50 ml lime juice
  • 3 packets of vanilla sugar
  • 2 sprigs lemon balm
  • 1 pack of pudding powder, no cooking (Galetta Vanilla)
  • 2 limes, sliced
  • e.g. lemon balm

Instructions

Working time approx. 45 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 45 minutes

Mix and sift the flour, cornstarch, and baking powder. Add the remaining dough ingredients and mix with a mixer for about two minutes. Pour the dough into a 26cm springform pan lined with baking paper and bake at 160°C (preheated to 160°C) for about 30 minutes. Allow the base to cool. For the cream, wash the lemon balm, pick the leaves, and chop finely. Mix together the quark, lime juice, vanilla sugar, and galetta powder. Fold in the lemon balm. Place a cake ring around the base and spread the cream on top. Chill for two to three hours. Remove the cake ring. Decorate the cake with lime slices and lemon balm.
