Ingredients for 1 servings:
- 8 large organic lemons
- 1 liter of spirit (alcohol, 95%)
- 500 g sugar, possibly more, up to 700 g
- 1 liter of water

First, wash the lemons thoroughly under warm water and clean the peel with a brush. Carefully peel off the yellow lemon peel, being careful not to cut off the white layer to avoid a bitter taste. Prepare 0.7 liters of alcohol in a container and place the prepared lemon peels inside. Store the container in a dry, dark place for one month, shaking it daily so that the alcohol absorbs the color and aroma of the lemon peels. After one month, heat the water with the sugar in a saucepan without boiling. Allow the sugar syrup to cool and add another 0.3 liters of alcohol to the container. Store the container in a dark, dry place for another 40 days. Then, pour the limoncello through a fine sieve or filter and bottle. The liqueur will have developed a smooth and aromatic flavor.
