Ingredients for 1 servings:

  • 1 liter of schnapps (spent grains)
  • 6 walnuts (green)
  • 50 g sugar (stomach sugar)
  • 1 clove(s)
  • 1 stalk of lavender
  • 1 stalk(s) cinnamon
  • 300 g sugar

Working time approx. 1 hour; Rest period approx. 40 days; Total time approx. 40 days 1 hour

Typical South Tyrolean walnut liqueur

On St. John’s Eve, June 21st, harvest the walnuts while they are still green, halve them, and place them in a bottle with the spent grain or grappa. Let the mixture steep in a sunny spot for a month. Then strain the liqueur and add the remaining ingredients. A week later, remove the lavender, cinnamon stick, and clove. It’s done. This sweetener is actually only available in South Tyrol. It’s probably red-colored rock candy. Alternatively, you can also use brown cubed rock candy. Spent grain is still grape brandy, which can also be replaced with grappa. Depending on your personal taste, you can even omit the lavender.
