Ingredients for 1 servings:

  • 750 ml vodka, 40%
  • 6 large lemons (organic)
  • 400 ml water
  • 300 g sugar
  • 1 ½ lemon(s) or 2, the juice

Instructions

delicious lemon liqueur

Use a vegetable peeler to peel the zest from the organic lemons, making sure to leave as little white pith as possible on the zest, otherwise the liqueur will be bitter. Empty the zest into a bottle with the vodka and let it steep for two weeks. After 14 days, bring the water and sugar to a boil until dissolved, then let it cool. Meanwhile, pour the now-yellow vodka through a tea strainer into a bowl. Gradually mix the vodka with the sugar water, tasting as needed; sometimes 300 ml of sugar water is enough. Finally, add the lemon juice; again, I taste it every now and then to see if it’s fruity enough. The limoncello can be enjoyed straight away, but tastes best chilled from the freezer.
