Ingredients for 4 servings:
- 500 g linguine or spaghetti
- 2 garlic cloves
- 2 lemons
- 1 tbsp butter
- 200 g peas, frozen or fresh
- 200 ml cream
- 100 ml chicken stock
- Salt and pepper, black

most delicious with homemade pasta… with a gentle lemon note and peas
Cook the pasta according to the package instructions. Meanwhile, peel the garlic and slice it finely. Rinse the lemon with hot water, ideally scrubbing with a brush. Dry it and finely grate the lemon zest. The citrus flavor will be more subtle if you use limes. Then cut a lemon in half and squeeze it. Melt the butter, sauté the garlic and peas in it. Add the cream, stock, and lemon zest and simmer over medium heat until light and creamy. Add about 2-3 tablespoons of lemon juice (depends on personal taste—so add it slowly before the sauce becomes too acidic), season with salt, and pepper. Mix the drained pasta with the lemon cream and divide it among deep plates. Pan-fried scallops and large shell-on prawns go perfectly with this. Serve garnished with a herb leaf.
